{"id":2909,"date":"2021-02-16T17:41:56","date_gmt":"2021-02-16T16:41:56","guid":{"rendered":"https:\/\/www.ph7foodtech.com\/?p=2909"},"modified":"2025-05-30T00:03:25","modified_gmt":"2025-05-29T22:03:25","slug":"por-que-nos-llamamos-ph7","status":"publish","type":"post","link":"https:\/\/www.ph7foodtech.com\/es\/blog\/por-que-nos-llamamos-ph7\/","title":{"rendered":"\u00bfPor qu\u00e9 nos llamamos PH7?"},"content":{"rendered":"\n<p>Primero definamos a grandes rasgos que es el pH: es la medida que utilizamos para conocer el grado de acidez o alcalinidad de una disoluci\u00f3n.\u00a0<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/www.ph7foodtech.com\/wp-content\/uploads\/2021\/02\/escala-ph.jpg\" alt=\"\" class=\"wp-image-2932\" width=\"610\" height=\"130\" srcset=\"https:\/\/www.ph7foodtech.com\/wp-content\/uploads\/2021\/02\/escala-ph.jpg 709w, https:\/\/www.ph7foodtech.com\/wp-content\/uploads\/2021\/02\/escala-ph-300x64.jpg 300w\" sizes=\"(max-width: 610px) 100vw, 610px\" \/><\/figure><\/div>\n\n\n\n<p>Como podemos ver cuando es menor de 7 tendremos un pH \u00e1cido (como un zumo de lim\u00f3n), y cuando es mayor de 7 tendremos un pH alcalino (como un detergente). <strong>El pH 7 es neutro.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u00bfC\u00f3mo afecta al pH en las especies que tratamos con nuestros aditivos?<\/strong><\/h2>\n\n\n\n<p>Una vez muere la especie, se lleva a cabo el proceso de transformaci\u00f3n del m\u00fasculo en carne. El principal de ellos durante el establecimiento del&nbsp;<em>rigor mortis&nbsp;<\/em>es la acidificaci\u00f3n muscular.&nbsp;<\/p>\n\n\n\n<p>Tras la muerte, el coraz\u00f3n deja de latir y por lo tanto la circulaci\u00f3n se detiene. No llegan ni ox\u00edgeno ni nutrientes al m\u00fasculo. Entonces el m\u00fasculo debe conseguir energ\u00eda de manera anaer\u00f3bica para transformar sus reservas de gluc\u00f3geno en ATP, con el fin de mantener la temperatura y estructura.
