En numerosas ocasiones, antes de realizar los procesos de cocci\u00f3n, se realizan descongelaciones de productos importados ya tratados previamente con sulfitos. Estos tratamientos no son siempre homog\u00e9neos pudiendo ser que alg\u00fan lote no venga con los PPM\u2019s de sulfitos adecuados y en su descongelaci\u00f3n puede aparecer melanosis. Para no aumentar los niveles de sulfitos, o incluir alg\u00fan otro antienzim\u00e1tico como el 4-HR, PH7 Food technology ha formulado un aditivo basado en antioxidantes que garantizan que durante la descongelaci\u00f3n no aparezca melanosis hasta el momento de su cocci\u00f3n.<\/p>\n\n\n\n<p>La aplicaci\u00f3n es muy simple y efectiva. Al ser un aditivo l\u00edquido, CRUSTAXYL ZERO se aplica directamente tanto en el agua de descongelaci\u00f3n como en la de cocci\u00f3n al porcentaje recomendado seg\u00fan la ficha t\u00e9cnica y su protocolo.
